When you want some veggies but don’t feel like salad or even like putting too much energy into your meal, the occasional grilled cheese with some healthy additions is always good. So here’s my latest grilled cheese. (Apologies for focus on the photo; I wanted to eat my sandwich while it was hot and rushed a bit on the picture taking!)
I’m using The Baker bread again, this time whole wheat and bran. On that I have sliced tomatoes, lots of shaved sweet red onion, and a mix of 50% reduced sharp cheddar and fat free Feta. Although I do love butter, I don’t always make my grilled cheese sandwiches with it. This time I used organic Smart Balance to keep the fat content in check. Still comes out quite good, but in my opinion, butter is ALWAYS better. And on the side, Dude Ranch Tortilla Chips from Early July.
Enjoy!
Jeanne, you are making me hungry …!

Jeanne-Where are you finding ripe tomatoes??? Must be hothouse, yes?

Not to sound dumb, but I don’t really know if they’re hothouse or not. My supermarket has an extensive organic produce section and I buy their “on-the-vine” tomatoes. I’m sure they’re coming from someplace distant, like California. They’re certainly not like our fabulous Jersey tomatoes when they start coming in, but they’re actually pretty good for the season.

Jeanne-
I never eat fruit unless it is local, that is why I soon will be blue from the blueberries coming in now. I don’t like them frozen, so I stuff my face for the next two weeks. D.

Hi, Diane, I prefer to eat locally and in season whenever possible, but there are some foods I do want year `round assuming they’re good. Organic – which can be hard to find locally grown – may not be available. Blueberries, of which New Jersey is the second largest producer in the nation, may have lots of pesticides. But I’m heartened – a new, small farmstand literally just opened in my own town – selling organic and in season! I’ll be checking him out shortly.

I just picked blueberries this morning from a local farm. May do a blog with them…yum. If I purchase fruit and veggies in the market, I always select organic. I vote with my dollars.

Me, too, whenever possible. Picking my own, time-wise, not always an option. All depends on the work on my desk. I need a personal shopper, berry-picker, etc. Oh – and while there, why not someone to clean my house, detail my car, cook to my specs, etc. Hah!

Let’s both add these to our bucket list! 😉 And while we are at it–win the lottery!

DEFINITELY the lottery!!! Wouldn’t that solve a lot of problems! (But I hear you have to play to win.)
